Mote con huesillo- Chile’s favourite drink for summer.

Mote con huesillo is a Chilean non-alcoholic drink made of boiled wheat and dried peaches. It can be used both as a dessert and as a refreshing drink and it is an absolute favourite of all Chileans…and now mine.

Not without a reason they say: “More Chilean that mote con huesillo.”

Actually it become one of my favourites the second I tried it. I was in Santiago in plain summer trying to reach the top of the famous hill in the capital. The sun was burning, the air was thick and hot and cold mote on the way up was really tempting. I tried and loved it. Maybe a little bit too sweet, but surely refreshing and filling.

You can get mote con huesillo all year round whether it is freshly made on the street or sealed in supermarkets, but it is in Spring when you start seeing many street vendors with trolleys offering that drink.

I contacted the mote con huesillo  masters and have the recipe for you if you fancy trying it at home.

Here it is how you can make it yourself:

Ingredients

4 servings

  • 1/4 kg of huesillos (dried peaches)
  • 1/4 kg of wheat grains
  • 1/2 cup of sugar
  • cinnamon stick
  • orange peel
  • 5 cups of water

Directions

  1. Wash dried peaches ( huesillo) and soak them overnight to hydrate in water with a cinnamon stick and orange peel (optionally).
  2. Once hydrated, cook them for about 30 minutes in sugary water (water used to soak the peaches) with a cinnamon stick if you like.
  3. To add the colour to the drink, carmelize some of the sugar until golden brown. Add to the mixture.
  4. Boil wheat (mote) until tender making sure not to overcook.
  5. Place a spoonful of wheat with one or two peaches and cover with the syrup. Serve cold.
